Latency follows distance: light in fibre covers about 200 km per millisecond, so a server on another continent adds 70–200 ms to every round trip. For websites that is a slower first byte; for games, trading terminals and remote desktops it is the difference between usable and not.
Location also decides the legal regime your data sits under (GDPR in the EU, UK GDPR, the US CLOUD Act), the price of bandwidth (cheap in Europe and North America, dearer in Asia and Oceania) and whether your server's IP address geolocates where you need it.

At most providers the same plan costs the same in every data center. The exceptions are Asian, Australian and some premium locations, where a few hosts charge more or include less traffic; the country and city pages use the price each provider charges in that place where it differs.
